Biscuit Topped Chicken Pot Pie (biscuit recipe included)

Chicken Pot Pie has always been a classic meal in my home. My mom often made it. It was so good, so creamy, and easy to make. But, I'm not a huge fan of pie crust; I'd rather eat biscuits any day! So, I took a classic recipe that my mom always made, and made it a recipe that I would eat more often. Also, you all are in for a lucky treat! I use Treyton's award winning biscuit recipe on top. Don't be fooled, the biscuit recipe is not only for the chicken pot pie recipe, but also for any other biscuit use your heart desires.



Biscuit Topped Chicken Pot Pie
1 clove garlic  $.06
1 medium onion  $.25 
1 can corn  $.69
1 can green beans  $.69
1/2 cup peas  $.11
1 chicken breast, cooked and diced  $1.00
1 can cream of chicken soup  $1.00
salt
pepper
biscuits

Dice onions and cook with chicken (cut into 1 inch squares) in a frying pan until chicken is cooked. Put onion and chicken in a large bowl. Mince garlic and add to bowl. Add corn, green beans, peas, and cream of chicken to bowl (make sure you drain the vegetables in the cans before adding them to the mixture). sprinkle salt and pepper into bowl. Mix. Add mixture to 9x9 in pan. Place biscuits on top. Bake at 375° for 25 minutes, or until biscuits are golden brown.

Buttery Biscuits
2 cups flour  $.16
1 Tbsp. baking powder  $.06
2 tsp. sugar  
1/2 tsp. cream of tartar  $.01
1/4 tsp. salt
1/2 cup (1 stick) butter  $.75
2/3 cup milk  $.13

Stir together flour, baking powder, sugar, cream of tartar, and salt. Cut in butter. Make a well in the center, and add milk all at once. Stir just until dough clings together. Knead gently for 10-12 strokes on a lightly floured surface. Roll or pat out to 1/2" thickness. Cut with a 2 1/2" biscuit cutter (or cup), dipping cutter in flour between cuts. Transfer biscuits onto a baking sheet. Bake at 450° for 10-12 minutes, or until golden brown.
